Loaded Sweet Potatoes
Introducing one of our favorite simple weekly meals: The Loaded Sweet Potato. It’s a staple on the menu at our house because it’s easy, healthy, and really tasty. These can be topped a number of ways, but below is our favorite way to eat them! I've simplified it below with store-bought guacamole, and you can make it even easier on yourself with rotisserie chicken or frozen chicken breast strips (bonus points for adding taco seasoning to your chicken for extra flavor!)
Ingredients
1 lb chicken breast + seasoning (I use McCormick Grill Mates Chipotle & Roasted Garlic!)
2-4 sweet potatoes (1 per person)
1 can of black beans
Guacamole (I used store-bought)
Instructions
Bake sweet potatoes in the oven or in Instant Pot until they’re good and soft. I usually get the big potatoes for individual portions, and it takes about 30 min in the Instant Pot.
While potatoes bake, slice chicken breast into fajita size bites. Season well with taco seasoning or (my favorite) McCormick Grill Mates Chipotle & Roasted Garlic seasoning. Cook in a skillet over medium with oil of choice (we use Grapeseed oil) until chicken is thoroughly cooked.
Top your individual sweet potato with black beans, chicken and guacamole. (Cilantro for bonus points!) I’ve also topped mine with plain Green Yogurt, hot sauce, and salsa verde. Enjoy!
