Taco Soup

Ah, yeeeah. The infamous Taco Soup recipe. This is an old college standby for me because it's cheap, easy, and filling.  Like many good soups, it's even better as leftovers.  I make this almost weekly, if you follow my Instagram stories you already know this...   I'm blogging it to share, and because I need a place for this to live where I can find it again!  I made this recipe up in college, and I have to write it down occasionally or else it gets forgotten.  It's great topped with avocado, cheese, sour cream, chips, cornbread, etc.  It's also interchangeable with ground beef or ground turkey depending on how healthy you feel like being :).  I do suggest seasoning the ground turkey with a little extra taco seasoning, if you go that route.

Taco Soup (Serves 4-6)

2 lbs lean ground beef or ground turkey

1/2 white onion, chopped

1 tbsp olive oil

2 cans black beans, drained

1 can whole tomatoes

1 can Rotel

1 can corn, drained

 1 can beef broth

1 package of taco seasoning

1 tbsp lime juice

Salt & pepper to taste

Roughly chopped cilantro to taste (I like a lot... almost 1/2 cup unpacked)

Brown your meat and drain the grease.  (If you feel like being a little bad, you can keep a little of the grease to cook the onions in... no judgement here!)  Drizzle about a tbsp of olive oil in the same pot and cook the chopped onion until translucent on medium heat.  Add the cans of Rotel and whole tomatoes, undrained.  You want the tomatoe-y juices all mixed in - it's free flavor!  Let this cook for a few more minutes on medium-low, and chunk up the whole tomatoes with your spoon as it cooks.  Add in the meat, beans, corn, beef broth, lime juice, and taco seasoning.  Cook for about 20 min on low, and add the cilantro towards the end of cooking time.  Taste it, and add salt and pepper as needed (It usually needs about a tsp of salt and a dash of pepper, in my opinion!) Serve it up, and let everyone choose their toppings (cheese, sour cream, guac, tortilla chips, etc!).  This is a crowd pleaser every time. Enjoy!
